  • 1 ⅓ cups white sugar
  • ⅓ cup shortening
  • 2 large eggs
  • 1 ½ cups grated zucchini
  • ⅓ cup water
  • 1 teaspoon vanilla extract
  • 1 ⅔ cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ⅓ cup chopped walnuts
  • 3 tablespoons unsweetened cocoa powder
  • ⅓ cup mini semisweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan; set aside.
  2. Beat sugar and shortening together in a large bowl using an electric mixer; beat in eggs. Beat in zucchini, water, and vanilla extract. Beat in flour, pumpkin pie spice, baking soda, salt, and baking powder. Stir in walnuts.
  3. Divide batter in half in two separate bowls; stir cocoa powder and chocolate chips into one half. Pour plain batter into the prepared loaf pan; pour chocolate batter on top.
  4. Bake in the preheated oven until a toothpick inserted into center comes out clean, about 1 hour. Cool 10 minutes; remove from pan. Store in the refrigerator.
