  • 1 cup brown sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3 ½ cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 2 cups peeled, chopped zucchini
  • 1 cup chopped, peeled apple
  • ½ cup chopped walnuts

Instructions

  1. Gather the ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
  2. Whisk eggs, sugars, oil, and vanilla together in a large bowl until well blended. Combine flour, cinnamon, baking soda, and salt in a separate bowl.
  3. Stir flour mixture into egg mixture until well combined. Fold in zucchini, apple, and walnuts until evenly distributed.
  4. Pour into the prepared pans.
  5. Bake in the preheated oven until the centers of each loaf spring back when pressed lightly, about 1 hour. Let loaves cool in the pans for 10 minutes before removing to a wire rack to cool completely.
