Baked Sweet Potatoes with Ginger and Honey

- 3 pounds sweet potatoes, peeled and cubed
- ½ cup honey
- 3 tablespoons grated fresh ginger
- 2 tablespoons walnut oil
- 1 teaspoon ground cardamom
- ½ teaspoon ground black pepper

Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- Toss sweet potatoes, honey, ginger, oil, cardamom, and pepper together in a large bowl. Transfer to a large cast iron skillet.
- Bake in the preheated oven until sweet potatoes are tender and caramelized, about 40 minutes, stirring halfway through.
