Italian Salsa Verde Marinated Mozzarella
Ingredients
- 3 tablespoons capers
- 2 anchovy filets
- 1 clove garlic
- 1/4 cup green onions
- 1/2 cup parsley leaves
- 1/3 cup mint leaves
- 1/2 cup extra-virgin olive oil
- 1 teaspoon lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon crushed red pepper
- 2 (8 ounce) containers mini mozzarella balls
- 1 (10 ounce) package cherry tomatoes
- salt and freshly ground black pepper to taste

Instructions
- Add capers, anchovies, garlic, green onions, parsley, and mint to the bowl of a food processor and pulse until very finely chopped. Transfer mixture to a bowl.
- Stir olive oil, lemon zest, lemon juice, red pepper flakes, mozzarella balls, and cherry tomatoes into herb mixture; season to taste with salt and pepper. Marinate, covered, in the refrigerator for at least 2 hours before serving.
