  • 1 teaspoon brown sugar
  • 3 tablespoons soy sauce
  • 1 tablespoon extra virgin olive oil
  • 2/3 cup red onion
  • 2/3 cup red bell pepper
  • 2 cloves garlic
  • 1 (1-inch piece) ginger
  • 3 largeeggs eggs
  • 4 cups cooked white rice
  • 1 cup frozen peas
  • 2 cups salmon,
  • 2 green onions green onions
  • Cilantro

Instructions

  1. Dissolve the brown sugar in the soy sauce in a small bowl. Set aside.
  2. Heat the olive oil in a large saute pan or wok on medium-high heat. Add the diced red onion and bell pepper and saute until lightly browned, about 5 minutes.,Lower the heat to medium, and stir in the garlic and grated ginger. Cook for a minute more.
  3. Add the beaten eggs and stir until just cooked. Add the cooked rice, and increase the heat to medium-high. Cook for a couple minutes more, stirring often.
