BBQ Salmon Curry with Mango Avocado Salsa.
Ingredients
- 1 pound salmon, sliced into 1 inch long fillets
- 1/4 cup extra virgin olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon chipotle chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt
- 4 tablespoons salted butter
- 3-4 cloves garlic, chopped
- 1 can full fat coconut milk
- 2-3 tablespoons Thai red curry paste
- 2 tablespoons tamari or soy sauce
- 1 1/2 cups diced mango
- 1 avocado, cubed
- 1-2 jalapeños, seeded, if desired, and chopped
- 1 shallot, chopped
- 1/2 cup cilantro, chopped
- 1/2 cup basil, chopped
- 1 tablespoon lime zest, plus 1/4 cup lime juice
- 1 teaspoon honey

Instructions
- 1. Preheat the oven to 500° F or high broil.
- 2. On a baking sheet, toss the salmon with olive oil, paprika, chili powder, chipotle chili powder, garlic powder, onion powder, and a pinch of salt. If desired, thread the salmon onto skewers. Arrange in a single layer. Broil until the salmon begins to crisp, 5-8 minutes, watch closely.
- 3. In a large skillet over medium heat, melt together the butter, garlic, and curry paste. Cook for 2-3 minutes until very fragrant. Add the coconut milk and tamari. Mix in a handful of chopped cilantro and or basil.
- 4. To make the salsa, combine all ingredients in a bowl.
- 5. Serve the salmon and curry sauce over bowls of rice. Top with salsa.
