Sweet Rhubarb Crisp
Ingredients
- 1 cup all-purpose flour
- 1 cup brown sugar
- ¾ cup old-fashioned oats
- ½ cup butter, melted
- 1 teaspoon ground cinnamon
- 4 cups chopped rhubarb
- 1 cup water
- 1 cup white sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine flour, brown sugar, oats, melted butter, and cinnamon in a medium bowl until crumbly; press into the bottom of a 9-inch square baking dish. Spread rhubarb in an even layer over crust.
- Combine water, white sugar, cornstarch, and vanilla in a small saucepan over medium-low heat; cook, stirring occasionally, until thick and clear, 5 to 10 minutes. Drizzle sauce over rhubarb.
- Bake in the preheated oven until topping is set, about 1 hour.
