  • 2 pounds red new potatoes
  • 4 strips bacon
  • 1 bunch green onions, chopped
  • ½ cup olive oil
  • 3 tablespoons white vinegar
  • 1 teaspoon ground black pepper
  • ½ teaspoon salt
  • 1 ½ ounces blue cheese, crumbled

Instructions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain, cool, and chop, leaving skins on. Set aside.
  2. Meanwhile, cook bacon in a large, deep skillet over medium-high heat until evenly browned. Drain, crumble, and set aside.
  3. Whisk green onions, oil, vinegar, black pepper, and salt together in a large bowl. Add potatoes, bacon, and cheese; toss to coat.
