Ingredients

  • 1 (14.1 ounce) package pastry for a double-crust 9-inch pie
  • 3 cups pitted plums
  • 1 cup white sugar
  • ¼ cup cornstarch
  • 1 teaspoon lemon juice
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Line the bottom and sides of a 9-inch pie plate with one pie crust. Set second crust aside.
  3. Place plums into a large bowl. Stir in sugar, cornstarch, lemon juice, vanilla, and almond extract with a rubber spatula until well combined. Spoon into a prepared pie crust.
  4. Cover filling with remaining pie crust. Flute the edges to seal or use a fork dipped in egg to press them down. Brush remaining egg on top, then cut several slits in the top crust to allow steam to escape.
  5. Bake in the preheated oven until filling is bubbly and crust is golden brown, 35 to 40 minutes. Let cool for 10 minutes before serving.
