Favorite Plum Pie
Ingredients
- 1 (14.1 ounce) package pastry for a double-crust 9-inch pie
- 3 cups pitted plums
- 1 cup white sugar
- ¼ cup cornstarch
- 1 teaspoon lemon juice
- ½ teaspoon vanilla extract
- ¼ teaspoon almond extract
- 1 egg, beaten

Instructions
- Preheat the oven to 425 degrees F (220 degrees C).
- Line the bottom and sides of a 9-inch pie plate with one pie crust. Set second crust aside.
- Place plums into a large bowl. Stir in sugar, cornstarch, lemon juice, vanilla, and almond extract with a rubber spatula until well combined. Spoon into a prepared pie crust.
- Cover filling with remaining pie crust. Flute the edges to seal or use a fork dipped in egg to press them down. Brush remaining egg on top, then cut several slits in the top crust to allow steam to escape.
- Bake in the preheated oven until filling is bubbly and crust is golden brown, 35 to 40 minutes. Let cool for 10 minutes before serving.
