Lemon Mochi Cake
Ingredients
- 3 ½ cups mochiko (sweet rice flour) (such as Koda Farms)
- 2 cups white sugar
- 1 (3.4 ounce) package instant lemon pudding mix
- 4 teaspoons baking powder
- 3 cups milk
- ½ cup unsalted butter, melted
- 5 eggs, lightly beaten
- 2 teaspoons lemon extract

Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Whisk mochiko, sugar, pudding mix, and baking powder together in a bowl until combined. Whisk in milk until smooth with no lumps. Whisk in melted butter, then eggs, then lemon extract; pour into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in center comes out clean, about 1 hour.
