Mexican Street Corn Salad
Ingredients
- 2 (15.25 ounce) cans whole kernel corn, undrained
- ¼ cup grated cotija cheese
- 2 tablespoons mayonnaise
- 2 tablespoons lime juice, or to taste
- 1 tablespoon butter, softened
- 1 pinch red chili powder to taste
- 1 sprig cilantro for garnish

Instructions
- Add corn with liquid to a saucepan; bring to a boil over high heat and simmer until hot. Drain; return corn to the saucepan.
- Stir in cotija cheese, mayonnaise, lime juice, butter, and chili powder; transfer to a serving dish and garnish with cilantro.
