Ingredients

  • 3 pounds Yukon Gold potatoes, or more as needed
  • ½ cup milk, hot
  • ½ cup cream cheese, softened
  • ½ cup chopped green onions, divided
  • 3 tablespoons butter
  • 1 large egg, lightly beaten egg, lightly beaten
  • 3 cloves garlic, or to taste, chopped
  • ½ teaspoon salt
  • ½ cup shredded Cheddar cheese

Instructions

  1. Gather the ingredients.
  2. Place potatoes in a large pot and cover with lightly salted water. Bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return to pot.
  3. Preheat the oven to 375 degrees F (190 degrees C). Grease a glass baking dish. Combine milk, cream cheese, ⅓ cup green onions, butter, egg, garlic, and salt in a bowl; add to potatoes. Mash until smooth; transfer to the prepared baking dish. Sprinkle with Cheddar cheese and remaining green onions.
  4. Bake in the preheated oven until lightly browned, about 40 minutes.
