Crostini with Mozzarella and Tomato
Ingredients
- 1 French baguette, cut into -inch diagonal slices
- 3 tablespoons extra-virgin olive oil
- 4 cloves garlic, halved
- 6 plum tomatoes, seeded and chopped
- salt and ground black pepper to taste
- 1 bunch fresh basil, julienned
- 1 pound fresh mozzarella cheese, sliced

Instructions
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Brush bread slices lightly with olive oil; place on a baking sheet. Broil until toasted, about 3 minutes. Watch carefully. Rub each crostini with cut-side of a halved garlic clove.
- Toss tomatoes in a bowl with a drizzle of olive oil; season with salt and black pepper.
- Place crostini on a serving tray. Top each with 1 slice mozzarella cheese, spoonful of tomatoes, and fresh basil.
