Ingredients

  • 1 cup white sugar
  • ½ cup unsweetened cocoa powder
  • ¼ cup vegetable oil
  • 2 large eggs
  • 3 teaspoons peppermint extract, or more to taste
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup semisweet chocolate chips
  • ¼ cup confectioners' sugar

Instructions

  1. Mix white sugar, cocoa powder, and oil together in a large bowl until well combined. Beat in eggs and peppermint extract until well blended. Mix flour, baking powder, and salt together in a separate bowl; stir into cocoa mixture until combined. Mix in chocolate chips until incorporated.
  2. Cover dough and place in the freezer for 1 hour; alternatively, refrigerate for 3 hours or longer.
  3. Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  4. Remove dough from the freezer and portion out rounded tablespoons. Form into balls with clean hands. Roll each ball in confectioners' sugar and place on the prepared baking sheets.
  5. Bake in the preheated oven until a toothpick inserted into the center of a cookie comes out mostly clean, about 20 minutes.
