  • 1 pound russet potatoes, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Place potatoes in a large bowl, cover with cold water, and let sit for 30 minutes.
  2. Preheat an air fryer to 400 degrees F (200 degrees C).
  3. Drain potatoes and pat dry with a paper towel. Add olive oil, salt, and pepper; stir until evenly combined. Place potatoes in the air fryer basket
  4. Cook in the preheated air fryer for 20 minutes, shaking halfway through cook time.
