  • 2 cans cannellini
  • 1 tablespoon extra virgin olive oil
  • 1/2 large yellow onion
  • 1 tablespoon fresh thyme
  • 2 cloves garlic
  • 1/8 head green cabbage
  • 1 cups fresh tomatoes
  • 2 celery ribs
  • 1 1/2 carrots carrots
  • 5 cups vegetable stock
  • 1 medium potato
  • 1/4 cup chopped fresh basil
  • 1/4 head red cabbage
  • 2 zucchini zucchini
  • 2 teaspoons salt
  • 1/2 cup grated Parmesan cheese
  • Tabasco sauce Tabasco sauce Tabasco sauce

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, thyme, and garlic. Sauté 5 minutes.
  2. Sauté 10 minutes.
  3. Bring to a boil. Reduce heat, cover and simmer for one hour.
  4. Cover and simmer until vegetables are tender, about 20 minutes longer. Taste, and season with salt if needed.
  5. To serve, stir in the cheese. Sprinkle in a dash of Tabasco hot sauce if you want to give the soup a little zip.,Serve with ground pepper and bread.
