Chicken Tzatziki Skewers with Feta Fries.
Ingredients
- 1/4 cup extra virgin olive oil
- 1 shallot, chopped
- 4 cloves garlic, chopped
- 2 teaspoons dried oregano
- 1 teaspoon chipotle chili powder
- 1 teaspoon honey
- 1-3 tablespoons harissa sauce
- 1 tablespoon lemon zest
- salt and black pepper
- 1 1/2 pounds chicken breasts, cut into bite-size chunks
- 1-2 cups Tzatziki sauce
- 1/2 cup garlic tahini
- 4 russet potatoes, cut into ¼-inch-thick matchsticks
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 cup mixed herbs – dill, basil, parsley
- 1 teaspoon lemon zest
- 1 clove garlic, grated
- 2 tablespoons toasted sesame seeds
- 1/2 cup crumbled feta cheese

Instructions
- 1. In a bowl, mix the olive oil, shallots, garlic, oregano, chili powder, honey, harissa sauce, lemon zest, salt, and pepper. Add the chicken and toss. If time allows, let sit for 10 minutes to deepen the flavor.
- 2. Preheat the oven to 450° F.
- 3. Thread the chicken onto each skewer and arrange on a baking sheet. Bake 20-25 minutes, until lightly charred and cooked through.
- 4. Meanwhile, make the fries. Toss the potatoes, olive oil, garlic powder, cayenne, and pepper together, then spread in an even layer on a sheet pan. Bake for 15-20 minutes, then flip and bake for 15 minutes more.
- 5. In a bowl, combine the herbs, lemon zest, garlic, sesame seeds, and feta. Toss the fries on the sheet pan with the feta. Then, season with salt.
- 6. Serve the chicken and fries with Tzatziki sauce and tahini (recipe in notes). Enjoy!
