  • 1 (15 ounce) can sweet potatoes, drained and mashed
  • 3 large eggs, at room temperature
  • 3/4 cup buttermilk, at room temperature
  • 1/2 cup vegetable oil
  • 3/4 cup nuts
  • 6 ounces Neufchâtel cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup nuts

Instructions

  1. Preheat the oven to 350 degrees F (180 degrees C). Spray a 9x13-inch pan with nonstick cooking spray. Set aside.
  2. Whisk together cake mix, sweet potatoes, eggs, milk, and oil in a bowl. Stir in 3/4 cup nuts; spread evenly into the prepared pan.
  3. Bake in the preheated oven until a toothpick inserted near the center comes out clean, 25 to 30 minutes. Remove to cool on a wire rack.
  4. Beat Neufchâtel cheese, butter, and vanilla together in a bowl with an electric mixer. Add powdered sugar and beat until well combined. Spread frosting evenly over cake and sprinkle with the 1/4 cup chopped nuts.
