  • 1 ½ teaspoons vegetable oil, or as needed
  • ½ cup half-and-half
  • 3 large eggs
  • ¼ cup canned pumpkin purée
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon pumpkin pie spice
  • ¼ cup finely chopped walnuts
  • 8 slices day-old bread

Instructions

  1. Lightly oil a skillet and heat over medium heat.
  2. Whisk half-and-half, eggs, pumpkin purée, cinnamon, vanilla, and pumpkin pie spice together in a bowl; stir in walnuts.
  3. Place 1 slice of bread into the bowl with pumpkin mixture; soak. Transfer bread to the hot skillet. Stir pumpkin mixture to redistribute walnuts. Repeat with other slices of bread, working in several batches if necessary.
  4. Cook each batch until golden brown, about 3 minutes per side. Serve warm.
