  • 2 tablespoons all-purpose flour
  • ¼ cup white sugar
  • ½ teaspoon ground cinnamon
  • 4 teaspoons butter

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 18-cup muffin tin or line cups with paper liners.
  2. Sift 2 ½ cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda, and salt together in a large bowl. Mix pumpkin, oil, and eggs together in a separate bowl. Add pumpkin mixture to flour mixture and stir just until batter is moistened: fold in apples.
  3. Spoon batter into the prepared muffin cups, filling each to the top.
  4. Mix 2 tablespoons flour, ¼ cup sugar, and ½ teaspoon ground cinnamon together in a small bowl. Cut in butter with 2 knives or pastry blender until mixture resembles coarse crumbs. Sprinkle topping evenly over muffin batter.
  5. Bake in preheated oven until a toothpick inserted into a muffin comes out clean, 35 to 40 minutes.
