Banana Nut Muffins
Ingredients
- 1 1/4 cups bananasmashed
- cup sugar
- 1 large egg
- 1 tablespoon coffee
- 1 teaspoon vanilla extract
- 1/3 cup butter
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- Pinch salt
- 1 cup chopped walnuts

Instructions
- Preheat the oven to 350°F. Line a muffin pan with paper liners.
- Thoroughly mash the bananas in a large bowl. Beat in the sugar, then add the egg and beat until combined. Mix in the coffee and vanilla extract, then the melted butter.,Simply Recipes / Michelle Becker

- Lightly spoon the mixture into a prepared muffin tin. Bake at 350°F for 20 to 25 minutes.,Check for doneness by pressing down on the top of the muffin. If it bounces back, it's done.
