Ingredients

  • 1/2 cup old-fashioned oats
  • 1 teaspoon chia seeds
  • 1/2 teaspoon espresso powder
  • 1 pinch salt
  • 1/2 cup milk
  • 1 tablespoon maple syrup
  • 1/2 teaspoon rum
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon cocoa powder
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon mini chocolate chips

Instructions

  1. In a jar or container that will hold 1 1/2 cups, add the oats, chia seeds, espresso powder, and salt. Stir together to combine. Add the milk, maple syrup, rum (if using), and vanilla. Stir well and top with a lid.
  2. Place in the fridge and chill overnight, or at least 8 hours. The oats will keep for 4 days refrigerated.
