Ricotta Naan with Fried Eggs and Sweet Potato Fries.
Ingredients
- 2 sweet potatoes, cut into matchsticks
- 4 tablespoons olive oil, plus more for cooking
- kosher salt and pepper
- 4-6 eggs
- 1 tablespoon raw sesame seeds
- 1/2 teaspoon smoked paprika
- 1 pinch crushed red pepper flakes
- 4 pieces fresh naan
- 1 cup whole milk ricotta cheese
- 1 pinch flaky sea salt
- zest from 1 lemon
- 1 tablespoon honey
- 1 cup arugula
- 1 avocado, sliced

Instructions
- 1. Preheat the oven to 425 degrees F.
- 2. Place the sweet potatoes on a large baking sheet and toss with 2 tablespoons olive oil, salt, and pepper. Transfer to the oven and bake for 15-20 minutes, then flip and bake for 15-20 minutes more. You want the sweet potatoes to be tender, but crisp.
- 3. Heat a skillet with a little olive oil over medium-high heat and fry the eggs to your liking. Remove the eggs and add the remaining 2 tablespoons olive oil, sesame seeds, paprika, chili flakes, and a pinch of salt. Cook 30 seconds or until the seeds are toasted. Remove from the heat.
- 4. In a bowl, mix the ricotta with a pinch of salt, lemon zest, and honey.
- 4. To assemble, spread each piece of naan with the ricotta mix. Top with fried eggs, sliced avocado, sweet potato fries, and arugula. Drizzle with the toasted sesame oil. EAT!
