  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, peeled and chopped
  • 2 (10 ounce) packages chopped frozen broccoli, thawed
  • 1 potato, peeled and chopped
  • 4 cups chicken broth
  • ¼ teaspoon ground nutmeg
  • salt and pepper to taste

Instructions

  1. Heat oil in a large saucepan. Add onion and garlic, and sauté until tender.
  2. Add broccoli, potato, and chicken broth. Bring to a boil, reduce heat, and simmer until vegetables are tender, about 15 minutes.
  3. Purée mixture with an immersion blender or in a countertop blender until smooth. Reheat, if necessary, season with nutmeg, salt, and pepper, and serve.
