Chocolate Chunk Greek Yogurt Banana Bread.
Ingredients
- 4 ripe bananas, mashed
- 1/2 cup plain whole milk Greek Yogurt
- 1/4 cup salted butter or coconut oil, melted
- 1/4 cup maple syrup or honey
- 2 eggs, at room temperature
- 2 teaspoons vanilla extract
- 1 1/2 cups whole wheat pastry flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup semi-sweet or dark chocolate chunks
- 1 stick salted butter, at room temperature
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon

Instructions
- 1. Preheat the oven to 350° F. Grease a 9×5 inch bread pan.
- 2. In a bowl, stir together the mashed bananas, yogurt, butter/coconut oil, maple/honey, eggs, and vanilla until combined. Add the flour, baking soda, cinnamon, and salt. Mix until just combined. Fold in the chocolate chunks/chips.
- 3. Pour the batter into the prepared pan. Bake for 50-60 minutes, or until the center is just set. Remove and let cool for 15 minutes before cutting, or just eat it warm with a smear of cinnamon butter. Enjoy!
- 4. To make the cinnamon butter. In a bowl, beat together all ingredients. Serve with the warm bread.
