  • 1/2 cup mayo
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Champagne vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1-2 cloves garlic grated
  • 1/2 cup grated parmesan cheese
  • salt and black pepper
  • 2 cups torn ciabatta
  • 1 clove garlic, sliced or grated
  • 2 tablespoons olive oil
  • 1 pound short cut pasta
  • 1 head romaine lettuce, shredded
  • 2 cups cherry tomatoes halved
  • 1 cup cubed spicy cheddar cheese
  • 8 slices cooked bacon, crumbled
  • 1 cup fresh basil leaves torn

Instructions

  1. 1. To make the dressing. Combine all ingredients in a glass jar and whisk until smooth. Season with salt and pepper.
  2. 1. Preheat the oven to 425° F. Toss together the ciabatta, garlic, and a pinch of salt with the olive oil. Bake for 10-12 minutes until toasted.
  3. 3. Bring a large pot of salted water to a boil. Boil the pasta to al dente, according to package directions. Drain.
  4. 4. In a large bowl, toss the hot pasta with the dressing and cheese cubes. Mix in the lettuce, tomatoes, bacon, and croutons, tossing to combine.
