  • 1 cup uncookedlong-grain white rice
  • 1 tablespoon extra virgin olive oil
  • 1 small onion,
  • 1/2 pepper green bell pepper
  • 1/2 pepper red bell pepper
  • 3 cloves garlic,
  • 2 (16-ounce) cans black beans
  • 2 tablespoons white vinegar
  • 1/4 teaspoon cayenne powder
  • 1 teaspoon dried oregano
  • to taste Kosher salt and freshly ground black pepper,
  • garnish wedges Lime

Instructions

  1. Cook rice according to package instructions. White long-grain rice usually takes 15 minutes to cook once the water is simmering, and 10 minutes to sit and steam.
  2. Heat oil in a large skillet on medium high. Sauté onions and bell peppers for 3 to 4 minutes, until just beginning to soften. Then, add garlic and sauté a minute more.
  3. Add the black beans, vinegar, and Tabasco or cayenne. Add vinegar, and bring to a simmer. Reduce heat, cover, and let simmer for 5 more minutes.
