Heat the oil in a heavy skillet over medium heat. Place a few plantain slices in the oil, and cook until lightly golden in color, about three minutes. Drain on paper towels. Repeat with the remaining slices.
While the plantain slices are still warm, place them one at a time between two sheets of wax paper, and flatten by hand to 1/4 inch thick. Return flattened slices to the skillet, and continue frying until golden brown. Drain on paper towels, and season with salt and garlic powder.
Combine mayonnaise, ketchup, and garlic in a small bowl. Cover and refrigerate sauce for at least 30 minutes before serving.

Combine 4 cups of cold water and 1 tablespoon of kosher salt. Slice the plantain into 1 1/2-inch-thick chunks and soak them in water for 20 minutes. (Soaking the plantains prevents browning and keeps the air-fried plantains from drying out while cooking.

Remove the plantains from the water and dry each one thoroughly. Toss the plantain slices in a bowl with 1 tablespoon of the cooking oil. Make sure each plantain is coated in a thin layer of the oil.
Transfer the plantains to your air fryer’s basket. Organize in a single layer, leaving a 1/2 inch of space on all sides of the slices to allow the air to circulate properly. Fry until the plantain offers no resistance when pierced with the tip of a knife. This can take anywhere from 3 to 6 minutes per side.

Increase the air fryer’s temperature to 400°F. Carefully remove the plantain slices from the basket and smash each one in a tostonera or place your soft plantain between a piece of parchment paper (or a brown paper bag) and smash it with a coffee mug. The plantain should be a flat 1/4-inch thick disc that holds together.
Return the smashed plantains to the air fryer basket (you may have to work in batches depending on the size of your basket).
Brush a light layer of oil onto the top side of the tostones and fry for 3 minutes on the first side. Flip the tostones and brush once more with a light layer of oil, then fry for the final time for 4 minutes instead of 3 minutes.

Immediately after removing them from the air fryer. Serve the tostones with the mayo-ketch sauce while still hot.

Peel the plantains by making a vertical cut through the skin and peeling it back with your hands or the edge of a spoon (see video).
Cut the plantains into 1-inch thick pieces. Heat a layer of oil in a heavy bottomed pan (see video to eyeball the amount).
Fry the plantains in batches. When the plantains are starting to turn light golden brown, remove from the oil and transfer to a plate lined with paper towels. Smash each piece with the back of a wooden spoon – this gives you a flatter shape with rougher edges. Return to the frying pan and fry for an additional 4-5 minutes or until golden brown and crispy. Transfer back to a paper towel lined plate to drain excess oil.
Sprinkle with sea salt and serve immediately, dipped in some kind of yummy sauce.
Preheat an air fryer to 400 degrees F (200 degrees C).
Slice tips off the plantain. Make a vertical cut in the skin from end to end, making sure to cut only through the thick skin and not into the plantain flesh. Cut plantain, still with the peel, into 1-inch chunks. Peel the skin off each chunk starting at the slit you made.
Place the plantain chunks in your air fryer basket and spray them with olive oil spray. Air fry for 5 minutes. Meanwhile, prepare a bowl of salted water.
Remove the plantain pieces from the air fryer with tongs. Smash to about 1/2-inch thickness using a tostonera (plantain smasher). Soak the smashed tostones in the bowl of salted water while smashing the rest.
Remove the tostones from the salted water and pat dry with a paper towel.
Return tostones to the air fryer in batches, filling the basket with a single layer each time. Spray the tops with olive oil spray and season with salt; air fry for 5 minutes. Flip with tongs and spray the other side with olive oil spray. Season with salt. Air fry until golden brown and crisp, 4 to 5 minutes more.

Preheat the oven to 350 degrees F (175 degrees C).
Make filling: Heat a large skillet over medium-high heat. Add ground beef to the skillet; season with salt. Cook and stir until beef is crumbly and browned, about 10 minutes. Drain and discard any excess grease. Stir sofrito, tomato sauce, water, sazón seasoning, and olives into beef. Reduce heat to medium-low and simmer until liquid is reduced, about 15 minutes.
Fill plantain cups with beef mixture, top with Cheddar cheese, and arrange on a baking sheet.
Bake in the preheated oven until cheese is melted, 5 to 8 minutes.
