  2. Bring a large pot of salted water to a boil over high heat. Add pasta and cook according to package directions for al dente. Drain.

  3. While pasta cooks, heat oil in a large Dutch oven over medium-high. Add beef and cook, stirring often to crumble, until no longer pink, about 5 minutes.

  1. Cook the lentils:

    Rinse the lentils well and add them to a pot along with 4 cups of water and 1/4 teaspoon of salt. Bring to a simmer, cover, and continue simmering over low heat until lentils are tender but not mushy, about 20 to 25 minutes. Drain lentils and set aside.

    LEFTOVERS: Leftover sloppy joe mixture will store well in the fridge for a few days or it can be frozen in an airtight container for up to 3 months. Reheat sloppy joe mixture gently over the stove with a splash of water. Spoon it atop a baked sweet potato for lunch the next day if desired!

    Stack 6 slices provolone cheese on a cutting board and use a chef’s knife to cut them into 1/2-inch pieces. Right before serving, stir in the cut cheese.

    Toast the brioche buns in a toaster oven or toaster. Lay the remaining 6 slices provolone cheese on each brioche bun half. Top the cheese with heaping spoonfuls of the sloppy joe mixture and the top bun. Serve warm.

    If you have leftover sloppy joe mixture, good news! It keeps beautifully in the fridge for 4 to 5 days and reheats well in the microwave or in a skillet with a splash of water or stock.

    You can freeze the mixture in a freezer-safe container for 3 months. Thaw it before reheating. If you need to thaw it quickly, you can do so in the microwave.

Whisk rice vinegar, 1 1/2 tablespoons sesame oil, 1 tablespoon Sriracha, 1 1/2  teaspoons soy sauce, and 1 teaspoon sesame seeds together in a cup. Pour dressing over slaw and toss to coat. Set aside to marinate, tossing occasionally, at least 30 minutes.

  2. Whisk water, hoisin sauce, 1 tablespoon Sriracha, fish sauce, and 2 teaspoons sesame oil together in a large bowl; set aside.

  3. Heat a 12-inch skillet over medium heat. Cook and stir pork in the hot skillet with a generous pinch Kosher salt, breaking up pork with a spatula, until browned and crumbly and fat has rendered, 8 to 10  minutes. Remove pork to the bowl with water-hoisin sauce mixture.

  4. Pulse mushroom pieces in a food processor until the size of green peas, 8 to 10 times. Heat 1 teaspoon olive oil in the same skillet over medium heat. Cook and stir mushrooms with a generous pinch of salt until liquid has evaporated and mushrooms are beginning to turn golden brown, 8 to 10 minutes. Transfer mushrooms to the bowl with pork.

  5. Meanwhile, pulse onion chunks, bell pepper chunks, and jalapeño together in the food processor until vegetable mixture resembles pico de gallo, about 15 times.

  6. Heat 1 teaspoon olive oil in the pan. Add onion mixture and a pinch of salt and cook until onions are translucent and most of the liquid has evaporated, 5 to 7 minutes.

  7. Process garlic cloves in the food processor until small enough that all the bits are sticking to the sides, about 10 seconds.     It’s very important that there are no huge chunks in the final sloppy joe mix, so if you don’t have a food processor, take your time while chopping them—do it in advance if you want. Just store the chopped veggies together in a covered container in the fridge.

    Starting in a cold nonstick skillet, cook the chorizo over medium heat, stirring often with a wooden spoon to break the meat into smaller pieces, until cooked through, 6 to 7 minutes.

  1. Sauté the carrots, onions, celery, and garlic:

    Heat olive oil in a large sauté pan on medium high heat. Add the minced carrots and sauté for 5 minutes. (If you are using bell pepper instead of carrots, add those at the same time as the onions.)

    Add the chopped onion and celery. Cook, stirring occasionally until onions are translucent, about 5 more minutes.

    Add the minced garlic and cook for 30 more seconds. Remove from heat. Remove vegetables from the pan to a medium sized bowl, set aside.

    Using the same pan (or you can cook the meat at the same time as the vegetables in a separate pan to save time), crumble the ground beef into the pan. If you are using extra lean beef, you may need to add a tablespoon of olive oil to the pan. Sprinkle the meat with salt.

    Do not stir the ground beef, just let it cook until it is well browned on one side. Then flip the pieces over and brown the second side.

    If you're cooking in batches, use a slotted spoon to remove the ground beef from the pan (can add to the set-aside vegetables) and repeat with the rest of the ground beef.

    When the meat is done cooking, strain off all but 1 tablespoon of any fat left in the pan.

    Return the cooked ground beef and vegetables to the pan. Use a wooden spoon to break up any chunks of ground beef into smaller bits.

    Add the ketchup, tomato sauce, Worcestershire sauce, vinegar, and brown sugar to the pan. Stir to mix well. Add ground cloves, thyme, and cayenne pepper.

    Lower the heat to medium low and let simmer for 10 minutes. Adjust seasonings to taste.
