In a small saucepan, combine the soy sauce, sherry, chicken broth, ginger, garlic powder and green onions. Bring to a boil, and immediately remove from heat. Set aside.
Preheat your oven's broiler. Thread chicken pieces onto metal or bamboo skewers. Arrange on a broiler pan that has been coated with cooking spray. Spoon 1 or 2 tablespoons of the sauce over each chicken skewer.
Place the pan under the broiler, and broil for about 3 minutes, until browned. Remove from the oven, turn over, and spoon more sauce onto each one. Return to the oven until chicken is cooked through and nicely browned.
Preheat the oven to 375 degrees F (190 degrees C). Grease an 8-inch square baking dish.
Place peach slices into the bottom of the baking dish and sprinkle with almond extract.
Combine flour, sugar, brown sugar, cinnamon, and salt in a bowl. Cut the butter into the flour mixture with a pastry cutter until the mixture resembles crumbs; sprinkle over peaches in an even layer.
Bake in the preheated oven until peaches are bubbling and topping is browned, about 45 minutes.

Heat a large cast-iron skillet over medium heat. Cook patties in the hot skillet until well browned, about 4 minutes; they will puff up due to steam from the melting cheese.
