Preheat the oven to 350 degrees F (175 degrees C).
Thoroughly mix ground beef chuck, Cheddar cheese, mayonnaise, and dry onion soup mix in a medium bowl.
Spread even amounts of ground beef onto the bottom half of each roll. Place top halves on, forming little sandwiches. Place on a baking sheet or baking pan. Cover the pan tightly with aluminum foil.

In a medium bowl, mix together potato, cheese, and mushrooms.
In a large bowl, mix ground beef with onion soup mix. Form into 6 large burger patties. Make a pocket in each burger, stuff with potato mixture, and seal.
When ready to grill, brush grate with oil. Cook burgers over high heat for 5 minutes on each side, or until well done. Serve hot.

Melt 1/4 cup butter, brown sugar, and mustard together in a small saucepan over medium heat; cook and stir until sugar is dissolved. Spread mixture over roll tops. Cover baking dish with aluminum foil and let stand, about 30 minutes.
Preheat oven to 350 degrees F (175 degrees C). Remove aluminum foil from baking dish.
Bake in preheated oven until tops are golden brown and cheese has melted, 15 to 20 minutes.
