  1. Combine cocoa powder and salt in a small bowl; set aside.

  2. Bring water and sugar to a boil in a saucepan, stirring until sugar is dissolved. Whisk in cocoa mixture slowly until incorporated. Reduce heat to medium; simmer, stirring occasionally, until sauce thickens slightly, about 3 minutes. Remove from heat and stir in vanilla.

  3. Pour sauce into a storage container and let cool at room temperature, uncovered, until thickened. Cover and store in the refrigerator.

  1. Mix water, flour, 1 teaspoon sugar, turmeric, and salt together in a bowl into a thick batter.

  2. Heat oil in a large saucepan or fryer. Dip jackfruit into the batter and deep-fry until golden brown, 2 to 4 minutes.

  3. Bring milk to a boil in a small pot; boil for 2 minutes. Add chocolate; stir until melted and smooth. Add 1 tablespoon sugar; stir until dissolved, about 1 minute. Simmer chocolate sauce over low heat, about 5 minutes.

  4. Place fried jackfruit on a serving plate. Pour chocolate sauce on top.

  1. Leave stems on peeled pears. Sprinkle with lemon juice to prevent browning. Set aside.

  2. In a saucepan large enough to accommodate 4 pears standing upright, combine water and sugar. Place over medium heat, and boil until sugar is dissolved. Stir in vanilla, then place the pears in. Reduce heat, cover, and simmer for 15 minutes. Allow to cool in liquid, then drain.

  3. In the top of a double boiler, combine chocolate, cream and butter. Heat, stirring, until chocolate is melted and smooth. Remove from heat, and stir in coffee liqueur.

  4. Place pears on serving dish, pour chocolate sauce over pears, and garnish with maraschino cherries.

  1. Melt butter in a saucepan over low heat. Add chocolate to butter; cook and stir until chocolate melts completely into the butter and the color is consistent, about 5 minutes.

    Heat the cream with a pinch of salt over medium heat in a small saucepan until tiny bubbles show and begins to lightly and slowly simmer.

  2. Remove from heat and add the chocolate:

    Remove from heat, add the chocolate, and whisk until smooth and fully incorporated.

  3. Serve immediately:

    Transfer the chocolate mix to a fondue pot heated at low or with a low flame, or serve straight from the pot.

    Arrange the dip-ables on a platter or plates around the chocolate pot.

    Use a fondue fork, bamboo skewer, seafood fork, or salad fork to dip the fruit pieces and other dip-ables into the hot melted chocolate mixture. Eat immediately.

    If the fondue begins to feel a little stiff, add a tablespoon of heavy cream and stir. It will help it go a little longer. Eventually, it will cook down though, and you may need to start a new pot.

  2. Stir in cream, a little at a time, until smooth. Heat through, without boiling, then remove from heat and stir in vanilla. Store sauce in the refrigerator.
