Cashew Crunch Salad with Sesame Dressing
Ingredients
- 1/2 green cabbage head of , finely shredded
- 1/2 purple cabbage head of , finely shredded
- 2 2 carrots , matchstick-cut or shredded
- 1 1 cilantro fresh , chopped
- 1/2 1/2 green onion sliced
- 2 2 edamame cooked (see FAQs)
- 12 roasted cashews – (see notes)
- 2 2 crunchy chow mein noodles (optional)
- chickenshrimpprotein , , or any other you like
- 1/4 1/4 olive oil (you can use any other oil as well)
- 3 tablespoons 3 tablespoons white vinegar
- 2 tablespoons 2 tablespoons sesame oil – very important for flavor!
- 2 tablespoons 2 tablespoons sugar
- 1 teaspoon 1 teaspoon salt
- garlic powder a few shakes of
- 1/4 1/4 Greek yogurt or mayo optional: (more or less to taste – this changes it from a vinaigrette to more of a creamy dressing)

Instructions
- Shake the dressing ingredients up in a jar until smooth. Add the Greek yogurt or mayo (if using) and shake again until smooth. YUM.
- Toss all the salad ingredients together. Drizzle with dressing and serve!
