  • 3 tablespoons olive oil
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • ½ red onion, chopped
  • 1 pound seitan, cut into strips
  • 2 tablespoons reduced-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 10 whole grain tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat; cook and stir bell peppers and onion in hot oil until tender, 3 to 5 minutes. Add seitan, soy sauce, garlic, chili powder, paprika, and cumin; cook and stir until seitan is heated through, 7 to 10 minutes.
  2. Spoon seitan filling onto each tortilla and fold tortilla around filling.
