Carrot Potato Gratin
Ingredients
- 1 1/2 pounds carrots
- 1 1/2 pounds Yukon gold potatoes
- 8 ounces Gruyere or white Cheddar cheese,
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh thyme
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon nutmeg
- 1 cup heavy cream

Instructions
- Gather all ingredients. Preheat the oven to 350 degrees F (180 degrees C). Grease a 9x13-inch baking dish.
- In a large bowl combine carrots, potatoes, 1 1/4 cups Gruyere cheese, the Parmesan, thyme, salt, pepper, and nutmeg. Toss to combine.
- Spread in prepared baking dish.
- Pour cream evenly over carrot mixture. Cover with foil.
- Bake in the preheated oven for 1 hour and 15 minutes. Remove foil.
- Sprinkle with remaining 3/4 cup Gruyere cheese.
- Bake, uncovered, until golden brown and vegetables are fork tender, 30 to 40 minutes. Let stand 10 minutes before serving.
