Melt In Your Mouth Pumpkin Bread
Ingredients
- 2 cups all-purpose flour
- 2 cups white sugar
- 2 (3.5 ounce) packages instant coconut cream pudding mix
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 cups canned pumpkin puree
- 1 ¼ cups vegetable oil
- 5 large eggs

Instructions
- Preheat the oven to 325 degrees F (165 degrees C). Lightly grease two 9x5-inch loaf pans.
- Combine flour, sugar, pudding mix, baking soda, salt, and cinnamon in a large bowl. Stir in pumpkin, oil, and eggs until just blended. Pour batter into the prepared pans.
- Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, about 1 hour. Remove from the oven and let sit for 15 minutes, then remove loaves from the pans and cool on a wire rack.
