Slow Cooker Irish Stew
Ingredients
- 2 tablespoons vegetable oil, or as needed
- 2 pounds cubed beef or lamb stew meat
- 6 potatoes, peeled and diced
- 4 medium yellow onions, sliced
- 1 ½ cups water
- 2 beef bouillon cubes
- salt and ground black pepper to taste

Instructions
- Heat oil in a skillet over medium heat. Add stew meat and cook until browned on all sides, 5 to 10 minutes.
- Transfer browned meat to a slow cooker. Add potatoes, onion, water, bouillon cubes, salt, and pepper.
- Cover and cook on Low for 8 hours.
