  • 3 teaspoons instant coffee granules
  • 1 cup hot water
  • 4 large eggs, separated
  • ¾ cup white sugar
  • ⅓ cup vegetable oil
  • 1 cup honey
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cloves
  • ½ teaspoon ground allspice

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C). Grease two 8-inch square pans.
  2. Mix coffee and hot water in a bowl. Cool.
  3. Beat egg yolks and sugar together in a large bowl with an electric mixer until creamy. Add oil and then honey, beating well after each addition.
  4. Combine flour, baking powder, baking soda, salt, cloves, and allspice in a separate bowl. Add flour mixture, alternating with coffee mixture and honey mixture, stirring batter briefly after each addition.
  5. Beat egg whites in a glass, metal, or ceramic bowl until stiff. Fold in three batches into batter. Pour into prepared pans.
  6. Bake in preheated oven until a toothpick inserted into the middle of cake comes out clean, 35 to 40 minutes.
