French Green Beans with Butter and Herbs
Ingredients
- 1 pound green beans
- 1/4 cup red onion
- 3 tablespoons unsalted butter
- 2 tablespoons parsley
- 2 tablespoons fresh thyme
- 2 tablespoons tarragon
- 2 tablespoons chives
- Salt and pepper
- Lemon

Instructions
- Bring a large pot of salty water to a boil. Prepare a large bowl of ice water. Blanch the beans in the boiling water for 2 minutes.,If you are using regular green beans, and not haricots vert, just boil them a little longer.,Plunge them into the ice water to stop the cooking and set the color. Drain the beans and pat dry on a cloth or paper towel.
- Heat the butter over medium-high heat in a large sauté pan. Cook the onions until translucent, about 2-3 minutes.
- Add the green beans and sauté for 2-3 minutes, stirring often.
