Garlic Parmesan French Fries Dressed in Caesar Dressing.
Ingredients
- 6 russet potatoes cut into ¼-inch-thick matchsticks
- 2 tablespoons extra virgin olive oil
- 2 tablespoons all purpose flour or gluten free flour
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper, use to taste
- kosher salt and black pepper
- 1/2 cup grated parmesan cheese
- 2 tablespoons chopped parsley or oregano
- 1/2 cup mayo
- 2 teaspoons lemon juice
- 2 teaspoons dijon mustard
- 2 teaspoons Worcestershire sauce
- 1-2 cloves garlic, grated
- 1/4 cup grated parmesan cheese

Instructions
- 1. Preheat the oven to 450° F.
- 2. Toss the potatoes with flour, paprika, garlic powder, cayenne, and a big pinch of salt. Toss to coat. Add olive oil and toss again, then spread in an even layer across two baking sheets. Do not overcrowd the pans. Bake 10-15 minutes, then flip and bake for 10 minutes more. Keep an eye on them, if you cut your fries super skinny, they can burn quickly.
- 3. Pull the fries out and toss with parmesan and herbs.
- 4. To make the dressing. Combine all ingredients in a glass jar and whisk until smooth. Add 1-3 tablespoons water to thin the dressing. Taste and adjust the salt and pepper.
- 4. Arrange the hot fries on a serving plate. Drizzle with generous amounts of Caesar dressing. Serve with additional dressing and ketchup for dipping. ENJOY!
