Spiced Chickpea and Couscous Bowls
Ingredients
- 1 tablespoon 1 tablespoon olive oil
- 1/2 onion chopped
- 1 garlic clove , minced
- 1 tablespoon 1 tablespoon chili powder and cumin each –
- 1 teaspoon 1 teaspoon turmeric and garam masala each –
- 1 teaspoon 1 teaspoon sea salt
- cinnamon and cayenne dash of each – (to taste)
- 14 chickpeas two -ounce cans , drained and rinsed
- 14 14 fire-roasted diced tomatoes two – cans
- cucumbers
- couscous
- mint, parsley, cilantro
- yogurthummus or
- olive oil
- lemon juice
- toasted pita wedges

Instructions
- Make the Chickpeas: Heat the olive oil in a large skillet over medium heat. Add the onion; saute until soft. Add the garlic, spices, salt, and chickpeas – stir until very fragrant. Add the tomatoes (undrained) and simmer for 20 minutes while you prep the other ingredients.
- Finish: Chop the cucumber, cook the couscous, and mince the herbs. Arrange bowls with desired amounts of all ingredients. Voila!
