  • 1 cup vanilla almond or cashew almond milk (such as Almond Breeze)
  • 4 large eggs
  • ½ cup white sugar
  • ½ cup all-purpose flour
  • ¼ cup butter, melted, plus more for greasing
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 cups fresh blueberries
  • ½ teaspoon confectioners' sugar

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch oven-safe skillet or baking dish with butter; set aside.
  2. Combine almond milk, eggs, sugar, flour, melted butter, vanilla, and salt in a blender; blend until smooth. Pour into the prepared skillet; top with blueberries.
  3. Bake in the preheated oven until center is set and top is lightly browned, about 40 minutes. Serve warm, dusted with confectioners' sugar.
