  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 ½ cups white sugar
  • ⅔ cup unsalted butter, softened
  • ¾ cup Champagne
  • 6 large egg whites

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch round cake pan.
  2. Sift flour, baking powder, and salt together in a medium bowl.
  3. Beat sugar and butter with an electric mixer in a large bowl until very light and fluffy. Mix in flour mixture alternately with Champagne.
  4. Beat egg whites in a glass, metal, or ceramic bowl until stiff peaks form.
  5. Fold 1/3 of the egg whites into cake batter to lighten it, then fold in remaining egg whites. Pour batter into prepared pan.
  6. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
